Loaded Cauliflower

Ingredients
  • 2 heads cauliflower, cut into bite size pieces

  • 2 Tablespoons olive oil

  • ½ teaspoon salt

  • ½ teaspoon coarse black pepper

  • 8+ ounces shredded cheddar cheese (we use Mexican blend)

  • 8 slices bacon, cooked & crumbled

  • 2 – 4 green onions, sliced thin (optional)

  • Hot sauce (optional)

Instructions
  1. Preheat the oven to 350°.

  2. Place the cauliflower in a large bowl and add olive oil. Toss to coat.

  3. Wrap 2 baking sheets with aluminum foil. Spread the cauliflower out onto the baking sheets and season with salt and pepper. Roast for 20 – 30 minutes.

  4. Remove the baking sheets from the oven and push all the cauliflower into a pile in the center of one of the baking sheets. Cover the cauliflower with cheese and bacon.

  5. Return the cauliflower to the oven and bake for an additional 5 – 10 minutes until the cheese is melted.

  6. Remove from the oven and top with sliced green onions. If you enjoy a little more kick, add a little hot sauce on top.
